It’s time to talk about cake again. Wedding cakes, in particular. We have been getting calls from one or two people who insist that they must taste all of the flavors of our cake before they can order a cake. Now this is something they saw on television. A baker hands the client a lovely plate with 5 or 6 special flavors for them to taste. Example: orange chiffon chocolate, pumpkin banana chip. Excuse me! Who wants to serve something like that to 100 guests at your wedding? Those are speciality cake flavors that some folks won’t be able to eat. Pumpkin Banana Chip cake? Might sound good to you but not to your neighbor.
The thing is–at a wedding you must chose the menu and the cake with as many things as most people will like. I think a pumpkin chocolate chip cake with cream cheese icing sounds great. But three people I have mentioned this to said, “Yuk!” They don’t like anything that hints of pumpkin. So I wouldn’t chose this to serve at a wedding. Too complicated for some people’s taste buds.
What kind of cake should you serve? If you want to offer different flavors, pick popular flavors. Chocolate, Vanilla, Red Velvet, for instance. If you want something unusual like hummingbird cake, order it for one tier. Some folks don’t like bananas and they will complain about your cake.
Having pointed this out, there are always exceptions. We designed a Starbucks Coffee Flavored Pound Cake with a Mocha filling for a bride. It took us five times to get the cake flavor right. You must make a very strong coffee and then make sure you have the right amount of flavoring in it. Of course, you have to bake it first and then taste it. But we finally got it right! The bride loved it and decided to order all three tiers of her cake as the Starbucks Coffee Flavored Cake. We suggested she might want to make one tier vanilla in case someone didn’t like coffee. (We were thinking of some of our staff who don’t like coffee.) But she said she wanted all three tiers with the Starbucks Coffee Flavored Cake. She said her family loved coffee. So we make the cake with all three tiers Starbucks Coffee Flavored Pound Cake. Well, she was right! They loved the cake.
So–it’s your wedding so you get to choose. But be careful. Choose flavors that a lot of people like.
Do you need to spend $20 tasting 4 or 5 cakes? Well, if you got the money, spend it. But remember, a good baker can make any kind of cake and a bad baker can’t make anything. We offer free cake tastings of our signature vanilla pound cake with buttercream frosting. We get the vanilla from a local flavoring company–Mother Murphey. They have made our vanilla for over 30 years. A pound cake is difficult to make. I’ll write about that in my next posting. So if you can make a good pound cake you can make any kind of cake.
